    Application
Diammonium hydrogenphosphate, a white crystalline or powdery inorganic phosphate, serves as a versatile compound with multiple applications. It exhibits high water solubility, with around 57 grams dissolving in 100 grams of water at 0°C, and a 1% solution displays a pH of 7.6-8.2. Primarily used in the food industry, it functions as a dough strengthener, firming agent, leavening, and pH control agent, finding applications in baked goods, alcoholic beverages, condiments, and puddings. In the context of bakery products, up to 0.25 part per 100 parts by weight of flour is typically used. Diammonium hydrogenphosphate is also significant in agriculture as a fertilizer, with technical grades typically containing 16 to 18% nitrogen and 20 to 21% phosphorus. It plays a crucial role as both a fertilizer in its own right and as an intermediate in producing complex fertilizers and bulk blends.
