Application

Polyoxyethylene stearate serves as an emulsifier and antifoaming agent used in processed foods, fruit jellies, and sauces. This waxy, light-tan solid is nearly odorless and has a congealing range between 39 and 45 degrees Celsius. It is soluble in water, alcohol, ether, and acetone, but insoluble in mineral and vegetable oils. The compound is a mixture of the mono- and diesters of stearic acid combined with mixed polyoxyethylene diols, which have an average polymer length of 7.5 oxyethylene units.
