Application

Arabinogalactan is a versatile, water-soluble polysaccharide derived from the timber of western larch trees. Presented as a dry, light-tan powder, it readily dissolves in hot and cold water, forming fluid solutions up to 60% concentration and transforming into a thick paste at higher concentrations. This plant extract, also known as larch gum, is a complex and highly branched polymer of arabinose and galactose, stable over a wide pH range and relatively unaffected by electrolytes. With its ability to remain stable in various conditions, Arabinogalactan is primarily used in food applications such as dressings and pudding mixes, offering both stability and functionality.
