Aluminum sulfate hydrate serves a versatile role as both a starch modifier and firming agent. In the food industry, it is utilized to maintain the firmness of pickles and vegetables during processing and acts as a processing aid in the preparation of baked goods, gelatins, and puddings. This compound, known chemically as Al2(SO4)3·12H2O, is a water-soluble white powder that is produced through the reaction of kaolin or nepheline with sulfuric acid. Beyond its applications in food processing, aluminum sulfate is significant in various industrial processes. It is utilized in non-metallic flotation and molybdenum circuits, particularly for the depression of talc at a neutral pH. Additionally, it functions in the treatment of talcous nickel ores when combined with carboxyl methyl cellulose, and exerts a depressing effect on minerals like calcite, dolomite, and barite. In fluoride flotation, aluminum sulfate acts as a co-depressant for barite-containing ores.
