Application
Allyl phenylacetate is a synthetic flavoring agent known for its stable, colorless to light yellow appearance and a fruity aroma reminiscent of banana and honey. This compound is primarily employed to enhance flavor compositions, particularly as a modifier with other phenylacetates in creating imitation pineapple, honey, and various fruit or rum flavors. Due to its honey-like scent, it also finds use in tobacco flavoring. While insoluble in water, allyl phenylacetate is miscible with alcohol and oils, making it versatile for diverse applications. It's used in candy and baked goods at concentrations of 10-15 ppm, with potential usage of up to 40 ppm in finished baked products. For optimal preservation, it should be stored in glass or tin containers.
